1. About 2 hours before grilling the steak, place it on a platter and grate over it half a large onion, using the coarse side of the grater. Turn the steak over and grate the rest of the onion on the second side. Let the steak marinate for about 2 hours.
2. When you are ready to set the steak on the grill, most of the onion will have been absorbed by the meat. This marinating gives an added taste to the steak that is agreeably flavorsome and yet subtle enough not to be easily identifiable as onion.
3. After the steaks have cooked, season them to taste with coarse or grated rock salt and fresh pepper.
