Bitter chocolate truffles
These truffles make the perfect end to any dinner party. For a lighter, sweeter taste, use a dark chocolate with less cocoa solids.
TAKES 2 HOURS • MAKES 24
2 × 100g bars dark chocolate, 70% cocoa solids, chopped
85ml/3fl oz double cream
1 tsp vanilla extract
cocoa powder or grated white chocolate, for dusting
1 Put the dark chocolate, cream and vanilla in a pan and heat very gently until melted. Transfer to a bowl, cool, then chill for 1½ hours until firm.
2 Use a mini ice-cream scoop or teaspoon to make 24 truffles, then dust them with cocoa or grated white chocolate. Chill until ready to eat. You can make these 4 days ahead or they will freeze for 1 month. To serve, thaw in a cool place and, if needed, dust with a little more cocoa or chocolate.
