6. Lemon Tarts

Ingredients:
For the crust
- 1 cup almonds
- 2 Tablespoons ghee
For the filling
Directions:
- Food process the almonds in a blender.
- Melt the ghee and combine with the ground almonds.
- Press the almond ghee mixture into the cups of a greased mini muffin pan.
- For the filling, melt the coconut butter and coconut oil and mix with the vanilla extract, lemon extract, lemon zest, and stevia.
- Spoon the filling into the cups.
- Refrigerate for 1-2 hours to set.
