19. Chia Coconut Jello Shots

- Heat the coconut milk gently in a saucepan. Stir in the gelatin powder until it completely dissolves.
- Remove from heat and mix in the vanilla extract, chia seeds, and stevia.
- Divide mixture between 8 shot glasses.
- Refrigerate to set for 2-3 hours. Serve with a small spoon.
