20. Chunky Pecan Candies

Directions:
- Place the coconut butter in between 2 pieces of parchment paper and roll into a 1/3-inch slab. Use a knife to cut the slab into small cubes.
- Line a mini muffin pan with liners.
- Divide the coconut butter cubes and pecan pieces between the muffin cups.
- Melt the dark chocolate and pour into the cups filling them.
- Place into the fridge to set for 20 minutes.
- Sprinkle the shredded coconut on top and then return to fridge to keep setting for 2-3 hours.
