ROYAL ICING FOR COOKIES

SKILL LEVEL: Apprentice

PREP: 10 minutes

MAKES: 2 cups, enough for one batch of cookies

2 cups sifted confectioners’ sugar

1/2 tablespoons water

1/2 tablespoons meringue powder

Food coloring, as needed

Beat all ingredients at low speed for 7 to 10 minutes, or until icing forms peaks.

Tip: After beating, keep icing covered with a wet kitchen towel as it can dry out quickly.

COOK’S NOTE: To make enough for both cookie recipes, double the ingredients.
