HOW TO
MAKE YOUR OWN DUCK BACON

STEP 1
Trim duck breasts of any excess skin, rinse under cold water, and dry slightly.
STEP 2
Mix salts, sugar, peppercorns, and herbs.
STEP 3
Completely coat each duck breast with salt mixture, taking care to press into all crevices. Place in refrigerator in a plastic ziplock bag or in a baking dish for 12 hours, turning meat once or twice.
STEP 4
Rinse the duck under cold water and dry thoroughly with paper towels.
STEP 5
Using your smoker, light the applewood chips and allow them to burn down.
STEP 6
Allow duck to smoke for 1 hour, remove from the smoker, and place in refrigerator.
STEP 7
Once chilled, slice the duck lengthwise into long, thin strips.
STEP 8
Using a frying pan or cast-iron pan on a medium heat, brown each side of the bacon to your preference.
