Our bartender, Jose, concocted this refreshing drink in namesake (and magenta) tribute to the bass-playing legend of funk. This is a take on a Tom Collins—replacing the traditional gin with vodka and using the French spirit Lillet to add an electric pink hue and slightly sweeten.

2 ounces good-quality vodka

1 ounce simple syrup

1 ounce fresh lemon juice

½ ounce Lillet Rouge

Ice

Club soda

Fresh mint, for garnish

In a cocktail shaker, combine the vodka, simple syrup, lemon juice, and Lillet Rouge.

Add a scoop of ice and vigorously shake.

Strain the vodka mixture into a tall glass filled with ice; the vodka mixture should only fill about one-half to three-quarters of the glass.

Finish by topping off the drink with club soda.

Fresh mint makes a great garnish to this refreshing drink.
