CORN FOUR WAYS

On my way up to our family cottage, I love stopping at the farm gates along the country roads for tomatoes, blueberries, new garlic and onions, and of course sweet corn—huge stacks of freshly cut cobs piled high on the farmer’s wagon, sometimes with only a collection bucket and a note listing the prices. If there is anything that tells us that summer is not only here but will one day be coming to an end, it’s the appearance of sweet corn. I can usually sense a whisper of September on the breeze, so I buy much more than I need, knowing that I can slice the kernels off any cobs I can’t devour before they pass their prime and freeze them. Here are four ways to take advantage of the harvest while it lasts.
