Pine-nut soup
4oz (110g) pine nuts
1½ pints (850ml) organic chicken or vegetable stock (cubes will do)
¼ pint (150ml) organic Jersey double cream
Liquidize the pine nuts with a small amount of the stock to begin with, gradually adding the rest. Pour the cream into this mixture and heat, but do not boil. If you use stock cubes, salt and pepper will not be needed.
