CREAMY CAESAR DIP

Rinsing the anchovies renders their harsh, fishy flavor more mild and delicate. The dip can be refrigerated in an airtight container for up to 1 day; season with additional lemon juice, salt, and pepper before serving. Serve with potato chips, bread sticks, or crudités.

anchovy fillets, rinsed

garlic cloves, minced

cup mayonnaise

½

cup sour cream

ounce Parmesan cheese, grated (½ cup)

tablespoon lemon juice

tablespoon minced fresh parsley

teaspoon pepper

Pulse anchovies and garlic in food processor until finely minced. Add mayonnaise, sour cream, Parmesan, and lemon juice and process until smooth, about 30 seconds, scraping down bowl as needed. Transfer to serving bowl, stir in parsley and pepper, and serve.
