PORT WINE AND BLUE CHEESE SPREAD

To quickly soften cream cheese, microwave it for 20 to 30 seconds. This recipe can be easily doubled to serve a larger crowd. The cheese spread can be refrigerated in an airtight container for up to 2 days; let sit at room temperature for 15 minutes before serving. Serve with thinly sliced baguette or crackers.

ounces blue cheese, crumbled (½ cup)

ounces mozzarella cheese, shredded (½ cup)

ounces cream cheese, softened

tablespoon mayonnaise

tablespoon port wine

small garlic clove, minced

cup pecans, toasted and chopped fine

Process all ingredients except pecans together in food processor until smooth, scraping down bowl as needed, about 1 minute. Transfer to 8-ounce ramekin or bowl, sprinkle with pecans, and serve.
