MEXICALI CHEESE SPREAD

To quickly soften cream cheese, microwave it for 20 to 30 seconds. This recipe can be easily doubled to serve a larger crowd. The cheese spread can be refrigerated in an airtight container for up to 2 days; let sit at room temperature for 15 minutes before serving. Serve with thinly sliced baguette or crackers.

ounces pepper Jack cheese, shredded (1 cup)

ounces cream cheese, softened

tablespoons salsa

tablespoons minced fresh cilantro

garlic clove, minced

Process pepper Jack cheese, cream cheese, salsa, 1 tablespoon cilantro, and garlic in food processor until smooth, scraping down bowl as needed, about 1 minute. Transfer to 8-ounce ramekin or bowl, sprinkle with remaining 1 tablespoon cilantro, and serve.
