You can substitute ground turkey for the chicken. Lavash, a flatbread commonly used in Middle Eastern cuisine, can often be found near the tortillas in the supermarket. If you cannot fit both lavash on a single baking sheet, use two baking sheets and bake on the upper-middle and lower-middle racks, rotating the baking sheets halfway through baking.

1. Adjust oven rack to middle position and heat oven to 475 degrees. Brush 2 tablespoons oil over both sides of lavash and lay on baking sheet. Bake lavash until golden brown, about 5 minutes, flipping halfway through baking.
2. Meanwhile, heat remaining 1 tablespoon oil in 12-inch skillet over medium heat until shimmering. Add chicken and cook, breaking up any large pieces with wooden spoon, until no longer pink, about 5 minutes.
3. Combine cooked chicken, spinach, fontina, garlic, pepper flakes, salt, and pepper in bowl. Spread mixture evenly over each lavash and top with goat cheese. Bake until cheese is melted and spotty brown, 6 to 8 minutes. Serve.
VARIATIONS
LAVASH PIZZAS WITH SPINACH, TOMATOES, AND OLIVES
Omit chicken and 1 tablespoon oil; skip step 2. Reduce pepper flakes to ¼ teaspoon. Add 1 tomato, cored and cut into ½-inch pieces, and ½ cup pitted large green olives, chopped, to spinach mixture. Substitute ½ cup grated Parmesan cheese for goat cheese.
LAVASH PIZZAS WITH LAMB, TOMATOES, AND FETA
Omit spinach. Substitute 1 pound ground lamb for chicken. Add 1 tomato, cored and cut into ½-inch pieces, and ½ teaspoon ground cinnamon to meat mixture. Substitute 1 cup crumbled feta cheese for goat cheese. Sprinkle with 2 tablespoons minced fresh parsley before serving.
