CREAMY PASTA WITH CHICKEN AND GARDEN VEGETABLES

Any flavor of Boursin will work well here. We like the convenience of using store-bought rotisserie chicken here; however, you can also use our recipe for Simple Shredded Chicken.

cups low sodium-chicken broth

2

cups water

1

pound thin spaghetti or spaghettini, broken in half

2

carrots, peeled and sliced ΒΌ inch thick

(5.2-ounce) package Boursin Garlic and Fine Herbs cheese, crumbled

4

ounces (4 cups) baby spinach

1

cup frozen peas

2

cups shredded rotisserie chicken

Salt and pepper

1. Cook broth, water, pasta, and carrots together in Dutch oven at vigorous simmer, stirring often, until pasta is tender, about 12 minutes.

2. Stir in Boursin, spinach, and peas until cheese is melted. Gently stir in chicken. Season with salt and pepper to taste and serve.
