PITTING NIÇOISE OLIVES

1. Place the olives between two clean towels (or paper towels).

2. Gently pound with a mallet. Be careful not to pound too hard or you will mush the olive and crack the pit into pieces. Once all of the olives have been cracked open, use your fingers to remove the pit from each olive.
