MINCING GARLIC TO A PASTE

Mashing garlic to a paste can be helpful when adding raw garlic to a dish as with our speedy Chicken Caesar Salad. The flavor of the garlic mellows substantially, and it can be incorporated more easily. To make garlic paste, place minced garlic on a cutting board and then sprinkle it with a pinch of salt. Scrape the blade of a chef’s knife across the garlic, mashing the garlic into the board. After a few scrapes, the garlic will turn into a sticky paste.
