CUTTING BROCCOLI INTO WEDGES
1. After cutting off stalk and setting it aside (do not discard), place head upside down, then cut it in half through center stalk.
2. Lay each half on its cut side. For each half, if it is 3 to 4 inches in diameter, cut it into 3 or 4 wedges, or into 6 wedges if 4 to 5 inches in diameter.
