Meatloaf mix is a combination of equal parts ground beef, pork, and veal and is available at most grocery stores. If you cannot find meatloaf mix, substitute equal parts 90 percent lean ground beef and ground pork. A 12-inch ovensafe nonstick skillet is required for this recipe.

1. Adjust oven rack to middle position and heat oven to 350 degrees. Whisk panko, parsley, milk, Worcestershire, egg, mustard, garlic, and salt together in medium bowl. Mix in meatloaf mix using hands.
2. Divide meat mixture into 4 equal portions. Toss each portion of meat back and forth between hands to form loose ball, then pat lightly into 4 by 3-inch oval loaves. Heat oil in 12-inch ovensafe nonstick skillet over medium heat until just smoking. Lay meatloaves in skillet and cook until well browned on first side, 3 to 5 minutes.
3. Meanwhile, combine ketchup, sugar, and vinegar in bowl.
4. Carefully flip loaves and tidy up edges using spatula. Brush meatloaves with ketchup mixture and transfer skillet to oven. Bake meatloaves until they register 160 degrees, about 20 minutes. Serve.
VARIATIONS
TEX-MEX MINI MEATLOAVES
Substitute ⅓ cup minced fresh cilantro for parsley, and add 1 (7-ounce) can drained and chopped green chiles and 1 tablespoon minced canned chipotle chile in adobo sauce to panko mixture in step 1.
CHEESY ITALIAN-STYLE MINI MEATLOAVES
Add ½ cup grated Parmesan cheese to panko mixture in step 1. Substitute 12 ounces (90 percent lean) ground beef and 12 ounces sweet Italian sausage, casings removed, for meatloaf mix. Substitute ½ cup jarred pasta sauce for ketchup, sugar, and vinegar mixture in step 4. During final 5 minutes of baking, sprinkle ½ cup shredded mozzarella over top of meatloaves.
