SLICING PORK FOR STIR-FRIES
Although some stir-fry recipes call for ground pork or thinly sliced boneless chops, we find that strips cut from pork tenderloin are the most tender and flavorful option. To make the pork easier to slice, freeze it for 15 minutes.
1. Place pork tenderloin on clean, dry cutting board. Using sharp chef’s knife, slice pork crosswise into ¼-inch-thick medallions.
2. Slice each medallion into ¼-inch-wide strips.
