SESAME-CRUSTED TUNA WITH WASABI DRESSING

We prefer the flavor and texture of yellowfin tuna here; however, any type of fresh tuna will work. Try to purchase tuna steaks that are about 1 inch thick; if the steaks are thicker or thinner, be sure to adjust the cooking time as needed.

tablespoon wasabi paste

tablespoon lime juice

Salt and pepper

(6- to 8-ounce) tuna steaks, 1 inch thick

tablespoons vegetable oil

1. Whisk mayonnaise, water, wasabi, and lime juice together in bowl and season with salt and pepper to taste. Spread sesame seeds in shallow dish. Pat tuna dry with paper towels, then coat with 1 tablespoon oil and season with salt and pepper. Press both sides of each tuna steak into sesame seeds to coat.

2. Heat remaining 1 tablespoon oil in 12-inch nonstick skillet over medium-high heat until just smoking. Gently lay tuna in skillet and cook until seeds are golden, about 2 minutes. Carefully flip fish and continue to cook until just golden, opaque at perimeter, reddish pink at center when checked with tip of paring knife, and registers 110 degrees (for rare), about 1½ minutes, or 125 degrees (for medium-rare), about 3 minutes.

3. Gently transfer fish to carving board and slice on bias. Serve with wasabi dressing.
