TOTAL TIME: 35 minutes
Queso fresco is a fresh, soft Mexican cheese available in many markets; however, if you can’t find it, feta can be substituted. Do not drain the canned pinto beans, as the canning liquid is part of the recipe.
12 |
(6-inch) corn tortillas |
Vegetable oil spray |
|
2 |
onions, halved and sliced thin |
3 |
green bell peppers, stemmed, seeded, and cut into 2-inch-long matchsticks |
2 |
tablespoons vegetable oil |
3 |
garlic cloves, minced |
3 |
tablespoons lime juice |
Salt and pepper |
|
2 |
(15-ounce) cans pinto beans |
1 |
tablespoon finely chopped jarred jalapeños, plus ¼ cup brine |
1 |
(14-ounce) bag green coleslaw mix |
4 |
ounces queso fresco or feta cheese, crumbled (1 cup) |
½ |
cup sour cream |
2 |
tablespoons minced fresh cilantro |
1. Adjust oven racks to upper-middle and lower-middle positions and heat oven to 450 degrees. Spray tortillas lightly with vegetable oil spray and spread out over two rimmed baking sheets. Bake until lightly browned and crisp, about 10 minutes, switching and rotating baking sheets halfway through baking.
2. Meanwhile, cook onions, peppers, and 1 tablespoon oil in 12-inch skillet over medium-high heat until softened and lightly browned, 5 to 7 minutes. Stir in garlic and cook until fragrant, about 30 seconds. Off heat, stir in 1 tablespoon lime juice and season with salt and pepper to taste; transfer to bowl and cover.
3. Heat remaining 1 tablespoon oil in now-empty skillet over medium heat until shimmering. Add beans (with canning liquid), jalapeños, and 1 tablespoon jalapeño brine. Cook, mashing beans with potato masher, until mixture is thickened, about 5 minutes. Season with salt and pepper to taste.
4. Toss coleslaw mix with remaining 3 tablespoons jalapeño brine in large bowl and season with salt and pepper to taste.
5. Spread bean mixture evenly over crisp tortillas, then top with queso fresco, cooked vegetables, and slaw. Whisk sour cream and remaining 2 tablespoons lime juice together and drizzle over top. Sprinkle with cilantro and serve.
