CORNED BEEF HASH WITH POACHED EGGS

TOTAL TIME: 40 minutes

We’ve found that frozen hash browns come in several styles; we’ve had the best results using cubed hash browns here (they are sometimes labeled “Southern” style). If you notice that the potatoes aren’t getting brown in step 3, turn up the heat (but don’t let them burn). We prefer to serve just 1 egg per person given the richness of this dish; however, you can nestle 2 eggs into each indentation and cook as directed.

ounces (4 cups) frozen diced potatoes

tablespoon vegetable oil

teaspoon minced fresh thyme or ¼ teaspoon dried

ounces thinly sliced corned beef, cut into ½-inch pieces

1. Cook bacon in 12-inch nonstick skillet over medium-high heat until fat begins to render, about 2 minutes. Stir in onion and cook until softened and lightly browned, about 8 minutes.

2. Meanwhile, microwave potatoes, oil, ½ teaspoon salt, and ¼ teaspoon pepper in covered bowl until hot, about 5 minutes.

3. Stir garlic and thyme into skillet and cook until fragrant, about 30 seconds. Stir in hot potatoes, cream, and hot sauce. Using back of spatula, gently pack potatoes into pan and cook undisturbed for 2 minutes. Flip hash, one portion at a time, and lightly repack into pan. Repeat flipping process every few minutes until potatoes are nicely browned, 6 to 8 minutes.

4. Stir in corned beef and lightly repack hash into pan. Make four shallow indentations (about 2 inches wide) in surface of hash. Crack 1 egg into each indentation and season with salt and pepper. Cover, reduce heat to medium-low, and cook until eggs are just set, about 5 minutes. Remove from heat and serve.

VARIATION

SWEET POTATO HASH WITH POACHED EGGS

Be sure to substitute sweet potatoes for just half of the potatoes here. If you try to replace all of the potatoes with sweet potatoes, the hash will have a very soft, mushy consistency.

Substitute 10 ounces frozen sweet potato fries, thawed and chopped coarse, for half of frozen diced potatoes. Substitute 12 ounces thinly sliced deli ham, cut into ½-inch pieces, for corned beef.
