We slightly prefer the sweeter and more delicate flavor of petite peas. Either a traditional or a nonstick 12-inch skillet will work for this recipe.

cups frozen peas |
1. Melt butter in 12-inch skillet over medium-high heat. Add shallot, sugar, and ¼ teaspoon salt and cook until softened, about 2 minutes. Stir in garlic and thyme and cook until fragrant, about 30 seconds.
2. Stir in peas and cook until heated through, about 2 minutes. Season with salt and pepper to taste and serve.
VARIATIONS
FAST BUTTERY PEAS WITH FETA AND MINT
Substitute 1 tablespoon minced fresh mint for thyme. Sprinkle with ¾ cup crumbled feta cheese before serving.
FAST BUTTERY PEAS WITH BACON
Omit butter. Cook 3 slices chopped bacon in skillet over medium-high heat until crisp, about 5 minutes; transfer to paper towel–lined plate. Add shallot, sugar, and salt to bacon fat left in pan and cook as directed. Stir in 1 teaspoon sherry vinegar and sprinkle with crisp bacon before serving.
