You can substitute sweet potatoes for the russets. If you don’t want to use the microwave, place the potatoes directly on the middle rack of a 350-degree oven and bake until tender, about 1 hour and 15 minutes.

medium russet potatoes (2 pounds)

Adjust oven rack to middle position and heat oven to 450 degrees. Poke potatoes several times with fork. Microwave potatoes, uncovered, until slightly soft to touch, 6 to 12 minutes, turning them over halfway through cooking. Place microwaved potatoes directly on oven rack and cook until skewer glides easily through flesh, about 20 minutes. Serve.
