TOTAL TIME: 15 minutes
Pear or grape tomatoes can be substituted for the cherry tomatoes if desired. If the cherry tomatoes are especially sweet, you may want to reduce or omit the sugar. A combination of red and yellow cherry tomatoes makes this an especially attractive side dish. Do not toss the tomatoes with the sugar and salt ahead of time or you will draw out their juices and make them overly soft.
1 |
tablespoon extra-virgin olive oil |
1½ |
pounds cherry tomatoes, halved |
2 |
teaspoons sugar |
1 |
garlic clove, minced |
2 |
tablespoons chopped fresh basil |
Salt and pepper |
Heat oil in 12-inch nonstick skillet over medium-high heat until just smoking. Add tomatoes and sugar and cook, tossing often, until tomatoes begin to soften, about 1 minute. Stir in garlic and cook until fragrant, about 30 seconds. Off heat, stir in basil and season with salt and pepper to taste. Serve.
