We like the flavor of spicy brown mustard here; however, Dijon or whole-grain mustard can be substituted.

onion, chopped fine |

(15-ounce) cans pinto beans, rinsed |

cups low-sodium chicken broth |

cup molasses |

tablespoons spicy brown mustard |

teaspoons cider vinegar |
Salt and pepper |
1. Cook bacon in large saucepan over medium heat until rendered, about 5 minutes. Stir in onion and cook until softened, about 5 minutes.
2. Stir in beans, broth, molasses, mustard, and vinegar. Simmer, stirring often, until beans are softened and sauce is thickened slightly, 15 to 20 minutes. Season with salt and pepper to taste and serve.
