This snack is a favourite of we girls in the family. Most times when we get together for lunch, we make a feast of this — it’s become a family tradition. It tastes so good — mildly fruity, slightly salty and creamy— and is hard to resist. It’s somewhat akin to Welsh rarebit you might think by the method, but its flavour is very different and also it must be eaten immediately or the topping will go brown.
Serves 2–4
4 slices sandwich bread
500g ripe bananas
120g diced bacon
125g grated tasty cheese
Preheat the oven to 170ºC. Line 2 baking trays with baking paper.
Lightly toast the bread.
Peel the bananas and mash well. Mix with the bacon and cheese and then spread onto the toast, making sure the topping goes right out to the edges. Place on the prepared trays.
Bake for 10 minutes, then place under the grill until the topping is bubbling and golden brown.
