Serves 4–6
125g butter, melted
100g sugar
1 egg
80g plain flour
80g self-raising flour
80g wholemeal self-raising flour
1½ cups hot stewed fruit, sweetened to taste
Preheat the oven to 180ºC. Grease an 18cm pie dish.
Mix the melted butter with the sugar. Whisk in the egg, then the combined flours.
Spoon half the pastry mixture into the prepared dish and spread up the sides, then fill with the hot fruit. Spoon the remaining pastry mixture over the top — it doesn’t matter if it doesn’t cover completely.
Bake for 30 minutes until the pastry is crisp and golden brown.
