Wax beans are wonderfully flavorful when they are tossed with this simple garlic-tarragon vinaigrette. Serve as a side dish with beef or lamb.

1. Bring 2 quarts of salted water to a boil in a large saucepan. Add the wax beans and cook for 5–6 minutes, until tender. Drain the beans and refresh under cold water to stop cooking.
2. In a small bowl, whisk together the onion, olive oil, vinegar, garlic, tarragon, salt, and pepper.
3. Put the wax beans in a serving bowl. Pour the vinaigrette over them and toss well. Let the beans stand for 10 minutes. Serve immediately, or refrigerate, in an airtight container, for up to 1 day.
