Broccoli Purée with Garlic

This purée is a wonderful accompaniment to almost any entrée. For a richer dish, you can mix crème fraîche into the purée.

1. Bring a large saucepan of salted water to a boil. Add the broccoli florets, cover, and cook over medium heat for 12–15 minutes, until tender. Drain.

2. In a food processor, combine the broccoli, oil, garlic, salt, and pepper. Purée until smooth, about 1 minute. Serve immediately.
