Sautéed Kale with Ricotta Salata

Frozen kale is just as healthy as fresh and is a great shortcut. Cooked with garlic and topped with ricotta salata (a drier version of ricotta cheese, sold in Italian delis), it is an easy and nutritious side dish. There is no need to defrost the kale before cooking.

1. In a large skillet over medium-high heat, melt the butter in the olive oil. Add the garlic and cook for 1 minute, until lightly browned. Add the kale, salt, and pepper, and mix well. Cover and cook for 20 minutes, or until tender (start checking after 10 minutes, adding small amounts of water if needed).

2. Serve hot with the ricotta sprinkled on top.
