This versatile mushroom sauce enhances simple grilled steaks and chops, as well as Garlic-Dill Meatballs.

MAKES 1 CUP
1. Heat the butter in a skillet over medium heat until the foam subsides. Add the mushrooms, and cook, stirring frequently, for 5 minutes.
2. Add the chicken stock and heavy cream and cook for 2 minutes. Remove from heat and stir in the sour cream, salt, pepper, and nutmeg. Serve immediately or refrigerate, covered, for up to 1 day.
