Mash the anchovies with a fork. Place them in a small jar that has a tight-fitting lid. Add the oil, vinegar, mustard, salt, and pepper. Cover the jar and shake vigorously until well blended, about 15–30 seconds. Serve immediately or refrigerate, covered, for up to 4 days. Shake the dressing before serving.
