Baked Eggs with
Swiss Cheese and Cream

Baked eggs, or shirred eggs, make great individual meals. This recipe calls for 10-ounce ramekins, but if you have only smaller ones, use one egg instead of two in each ramekin.

1. Preheat the oven to 350°F.

2. Butter four 10-ounce ramekins and break 2 eggs into each one. Cover each portion with ¼ cup cheese and ¼ cup warm cream, and season with salt and pepper.

3. Place the ramekins in a roasting pan filled with enough water to come halfway up the sides of the ramekins. Bake for 15 minutes, or until the cheese begins to brown. Serve immediately.
