Sweet basil blends beautifully with the mild, almost nutty flavor of squid. Squid freezes well, so if you don’t have access to fresh squid, the frozen product is fine.

1. Combine the squid, ¼ cup of the olive oil, lime juice, garlic, and hot pepper sauce in a bowl and mix well. Cover and marinate in the refrigerator for 1 hour.
2. Add 1 tablespoon of olive oil to a wok or heavy skillet. Heat at medium-high heat until the oil shimmers. Remove the squid from the marinade, pat dry, and add to the wok (you can cook the squid in two batches, adding more oil if needed). Cook, stirring frequently, for about 4 minutes, until the squid is opaque and tender.
3. Garnish with basil and serve immediately.
