This delicious French classic is wonderful served with mushrooms sautéed in butter.

1. On a plate, mix the bake mix, salt, and pepper. Put the eggs on another plate.
2. Pound the chicken breasts until they are very thin, about 1/8 inch thick. Place 1 slice of Swiss cheese and 1 slice of ham on each chicken piece. Fold the chicken in half, creating a “sandwich.” Dip the chicken in the eggs and then dredge in the bake mix, shaking off any excess.
3. Heat the oil in a skillet over medium-high heat until hot but not smoking. Cook the chicken for 4 or 5 minutes on each side, or until golden brown and cooked through. Serve immediately.
