1. Heat the butter in a skillet over medium heat until the foam subsides. Add the shallots and cook until translucent, about 2 minutes. Add the white wine, port, and ham to the skillet. Bring to a boil, then lower the heat and simmer for 3 minutes. Transfer the ham to a serving plate and keep warm.
2. Whisk the cream and tomato paste into the skillet sauce and bring to a gentle boil. Lower the heat slightly and simmer for about 4 minutes, until slightly thickened. Season with salt and pepper. Pour the sauce over the ham and serve immediately.
