1. Preheat the grill or broiler. Brush the zucchini slices with oil and grill or broil them for 2–3 minutes on each side, or until lightly browned. Let the zucchini cool slightly.
2. Spread each zucchini slice with 1½ teaspoons of chèvre. Top with 1 teaspoon of chopped tomato and 1 teaspoon of parsley, and season with salt and pepper.
3. Roll up the zucchini slices jelly-roll style and secure with toothpicks. Serve immediately.
