1. Combine the veal, beef, pork, onion, garlic, club soda, parsley, paprika, and pepper in a large bowl and mix well. Take 1 heaping tablespoon of the mixture and shape it into a 3-inch ball. Continue making balls in the same manner until all the mixture is used (you will have 15 to 20 balls).
2. Heat the oil in a heavy skillet over medium heat until hot but not smoking. Reduce heat to medium. Cook the meatballs in batches, turning frequently, for 12–15 minutes, until nicely browned and cooked through. Season the meatballs with salt and serve immediately.
