This savory casserole is perfect for serving large groups; you can even double it if needed and simply bake it in two pans. Try it the next time you host a brunch. If you prefer a less spicy casserole, substitute 1 chopped green bell pepper for the jalapeños.

Preheat the oven to 350°F. Spray a 9- by 13-inch baking pan with cooking spray.
In a large skillet over medium-high heat, cook the sausage, breaking it up with a wooden spoon, until browned, about 8 minutes. Drain any excess grease. Add the cream cheese and cream, mix together, and cook for another 5 minutes, until the mixture is creamy. Remove from the heat.
In a medium bowl, mix together the eggs, jalapeño, onion powder, parsley, and pepper. Spoon the sausage mixture into the egg mixture and mix together. Pour the mixture into the prepared baking pan. Sprinkle the cheese over the top, if using.
Bake for 25 to 30 minutes, until the top is golden brown and the center is thoroughly cooked.
