Quick One-Minute Muffin

This is an excellent recipe to make in a time crunch! Serve with a pat of butter and spread a little sugar-free jelly on it for a satisfyingly sweet treat. Ground sunflower meal can be found in your local health food store and online.

Makes 1 serving

Spray a microwave-safe cup or mug with cooking spray.

In a small bowl, combine the egg, sunflower meal, cream, Truvia, vanilla, and salt and mix well. Pour into the prepared cup and heat in the microwave oven for 1 minute. Top with the butter and eat right out of the cup.

Variation

Substitute ground flaxseed meal for the sunflower meal. Add another tablespoon cream to adjust for the flaxseed, which is a bit drier than sunflower meal.
