You can easily adjust the spiciness factor by including the seeds from the jalapeño if you like your bread with a nice kick. If not, just leave them out. Pickled jalapeños are a good option too—they add more flavor with very little heat.
Makes 4 servings
Preheat the oven to 375°F. Line a baking sheet with parchment paper or a silicone mat.
Combine the mozzarella, Parmesan, and eggs in a bowl and mix until fully combined. Spoon the mixture onto the prepared baking sheet in 4 portions. Top each with slices of jalapeño.
Bake for 15 to 20 minutes, until the cheese has fully melted and the bread begins to brown.
Let cool for 5 minutes and serve.
