It’s always hard to stick to a diet around the holidays, so your friends and family will appreciate these candied pecans. They can indulge guilt-free.
Makes 16 servings
Preheat the oven to 325°F. Line a baking sheet with parchment paper or a silicone mat.
Melt the butter in a small microwave-safe bowl in the microwave oven. Add the erythritol, vanilla, and cinnamon and mix together.
Put the pecans in a large zip-top plastic bag. Pour in the butter mixture, seal the bag, and shake gently until the pecans are completely covered with the butter mixture.
Spread out the pecans on the prepared baking sheet in one layer. Bake for 10 minutes, until the nuts are toasted and fragrant, checking frequently to make sure they don’t burn. Let cool completely. The coating will harden as the pecans cool.
Serve immediately, or put them in small decorative boxes for gifts.
