Fatty Coffee

Most of the time I can skip breakfast completely when I enjoy a fatty coffee! The healthy fats—butter and MCT oil—in every cup keep me full and energized for hours. The trick to making this recipe smooth and frothy is to blend it in a high-speed blender to emulsify the fats and coffee into a rich and satisfying morning drink.

Makes 1 serving

Blend the coffee, coconut oil, butter, and stevia together in a blender on high for about 10 seconds. Make sure the lid is on tight—the coffee will be very hot. Remove the lid carefully, pour into a mug, and enjoy.

Variation

Add oil flavoring to this recipe to create different drinks. Peppermint is a favorite of mine around the holidays. A pinch of cinnamon is very nice too.
