If Carrie Bradshaw had known about monkfruit sweetener, I like to think she would have made her cosmopolitan just like this one. Lightly sweet, not too tart, and pretty low in calories.
Makes 1 serving
In a very small microwave-safe bowl, stir together the sweetener and 1 tablespoon water. Heat in the microwave oven for 15 seconds and stir until the sweetener is dissolved, creating a simple syrup (see Margarita). Microwave for 10 seconds longer if needed to dissolve the sweetener.
In an ice-filled cocktail glass, combine the simple syrup, vodka, and cranberry juice. Stir thoroughly and garnish with a lime wheel.
