This recipe is an excellent quick dinner and a great way to use a cooked rotisserie chicken. You can also purchase precut shredded cabbage. Feel free to assemble the salad in the morning, then, just before serving, add the sesame dressing and toss to combine.
Makes 4 servings
For the salad
In a large serving bowl, mix together the chicken, cabbage, broccoli, green onions, sprouts, cashews, and cilantro. Set aside.
For the dressing
In a bowl, whisk together the coconut aminos, sesame oil, vinegar, lime zest and juice, ginger, garlic, and chili sesame oil, if using.
Just before serving, drizzle the dressing over the salad and toss to combine. Garnish with the sesame seeds.
