Keto Calzones

With a treat that is so filling, it’s best to serve it with a light side salad to avoid feeling too full. The recipe makes a wonderful dough that you can pack with almost any of your favorite meats.

Makes 12 calzones (6 servings)

Preheat the oven to 350°F. Line two baking sheets with parchment paper or silicone mats.

In a small skillet, cook the ground beef over medium-high heat, breaking it up with a wooden spoon, until browned. Add the cheddar and marinara and mix until combined. Set aside.

In a microwave-safe bowl, mix together the mozzarella and parsley until combined. Heat in the microwave oven until it melts, about 1 minute. Add the almond flour and egg and mix until just combined.

Transfer the dough to one prepared baking sheet and knead until it comes together. Place a sheet of parchment paper on top of the dough and use a rolling pin to roll out the dough to an approximate 6- by 8-inch rectangle about ¼ inch thick. Cut the dough into 12 (2-inch) squares.

Place about 1 tablespoon of the beef mixture in the center of one dough square, making sure to keep the edges free of sauce (otherwise the dough won’t stick together properly). Fold the dough over to form a triangle and press the edges together with a fork to seal them.

Repeat to make 12 calzones, placing each on the second prepared baking sheet.

Bake for 15 to 20 minutes, until golden brown.

Serve hot.
