Any cut of chicken will work here, but if you are looking to increase your fat intake, use bone-in chicken thighs, drumsticks, or wings instead of chicken breasts.
Makes 6 servings
Divide the chicken between two large zip-top plastic bags.
In the bowl of a food processor or blender, combine the cilantro, garlic, olive oil, lime juice, sweetener, salt, and pepper and mix on high until nearly smooth. Pour half of the marinade into each zip-top bag, remove as much air as possible, and seal. Marinate in the refrigerator for at least 1 hour or up to 24 hours.
Prepare a gas or charcoal grill for cooking (you can use a stovetop grill pan as well).
Remove the chicken from the marinade, shaking off any excess. Grill until cooked through, 5 to 7 minutes on each side. (Watch closely. Cooking times may vary depending on the heat of your grill).
