Braised Beef Short Ribs

Don’t expect any leftovers when you make these ribs—everyone will eat every bit. Spoon them over mashed cauliflower and add a side vegetable for a full meal. Here I give both grilling and pressure cooking instructions.

Makes 4 servings

In a large zip-top plastic bag, combine the short ribs and all the remaining ingredients. Seal and marinate in the refrigerator for at least 3 hours or up to overnight. The longer you marinate, the more tender the ribs.

Gas grill method

Preheat a gas grill to 400°F. Remove the short ribs from the marinade, shaking off any excess. Grill the short ribs for 15 to 20 minutes, until brown and tender. The internal temperature should be 130°F for perfect tenderness.

Instant Pot or pressure cooker method

Add the short ribs and their marinade to an Instant Pot or pressure cooker and cook on high pressure for 45 minutes. It sounds like a long time, and they are good after 30 minutes, but they come out extremely tender if you cook them for the full 45 minutes.
